BANANA BREAD

Ingredients:
1/3 C. Butter
1/2 C. Sugar
2 Eggs
1 3/4 Cups Sifted All-Purpose Flour
1/2 tsp. Soda
1 tsp. Baking Powder
1/2 tsp. Salt
1 C. Ripe Mashed Banana
Chocolate Chips or Nuts Optional

Directions:
Preheat oven to 350 degrees. Grease standard bread/loaf pan. Let the butter soften a bit before mixing. Cream together butter and sugar; add eggs and beat well. Sift together dry ingredients and add to the creamed mixture, stir together just until  mixed. Now, add the mashed banana, blending well.  After this, if you would like to add the chocolate chips or nuts do so. Add how much you would like. Bake for 45-50 minutes and until golden brown. To make sure the bread is completly cooked stick a toothpick in the middle. If that comes out clean it's done. Don't overcook. Gently go around the sides of bread with butter knife to loosen. Flip over to remove the bread from pan; cool on rack. Wrap and store overnight. Or of course there's nothing better than serving a warm piece of fresh bread straight out of the oven. Enjoy...the Meals in a Rush way!
