SWEET 'N SPICY GLAZED CHICKEN
Ingredients: 6 Chicken Breasts 1 C. Low-Sodium Soy Sauce 1 C. Low-Sodium Chicken Broth Salt and Pepper to Taste 2-3 Garlic Cloves Cooking Oil to Coat Pan 1 tsp. Cayenne Pepper 1/2 C. Brown Sugar 2 T. Lemon Juice 1/4 C. Cornstarch
Directions: First in pan with cooking oil, cook chicken until a nice golden brown. Salt and pepper to taste. Meanwhile, turn crockpot on low to cook 6-7 hours or high 3-4 hours. In the crockpot add 1 cup soy sauce, 1 cup chicken broth, 1/2 c. brown sugar, 2-3 chopped garlic cloves, 1 tsp. cayenne pepper, 2 T. lemon juice.....stir all together. Taste to see if you like it. I always like a lot of cayenne pepper! You can also add more brown sugar and soy sauce too! This recipe is so easy and is all about how sweet or spicy you'd like it! Once stirred and mixed to your liking....add the chicken and let cook! The longer it cooks of course the more tender. When the chicken is done set aside. Pour the liquid into a saucepan and bring to complete boil. In separate bowl mix 1/2 cup water to 1/4 cup cornstarch. Mix together. Should look like milky liquid. Add that liquid to the chicken liquid. Mix and let boil for about 15 minutes until sauce starts to thicken. Stir once in a while. This makes the glaze for the chicken. You do not have to make this and can just serve the chicken as is. This recipe also makes great leftovers! Enjoy....the Meals in a Rush way.
